A long time ago in Paris, there was an old man named Grandpa Giuseppe who had a little cafe. He also had an 8-year-old grandson named Blinki who loved to play in the kitchen. Grandpa was very kind and gave his leftover food to the people who had no homes.
One day, a new fancy restaurant opened next door, and Grandpa’s cafe started losing all its customers.
On the last day of the cafe, Grandpa was packing up, and Blinki found some leftover ingredients. He started playing and mixing them. Blinki didn’t know what he was making! When Grandpa came back, he was upset because they didn’t have much food left. He put the pan on the stove, but the stove was still on! Soon, a yummy smell filled the air.
Grandpa looked and saw that Blinki had made flat, tasty crepes! The smell was so good that even the fancy restaurant’s customers came over.
Grandpa’s cafe became busy again, and from that day on, they served "Blinki’s Crepes." Now they had enough to help the homeless and keep the cafe open too!

- 2 large eggs
- 1 1/2 cups milk (or heavy cream for extra rich blini)
- 2 tablespoons melted butter 🧈 (mixed into the batter)

7. Pour about 1/4 cup of batter into the pan and tilt it in a circle to spread the batter thinly. It should cover the bottom of the pan like a flat, round pancake! The thinner, the better!
8. After about 1-2 minutes, when you see tiny bubbles and the edges look golden, it’s time to flip! Use your spatula to gently lift and flip the crepe over. Cook for another 1 minute on the other side. You're like a flipping master now!

9. Keep going! Pour, cook, flip, and repeat until you’ve used up all the batter. You’ll make about 8-10 crepes.
