Mini Turkey & Cheese Roll-Ups are a fun lunchbox version of this idea. A whole-grain tortilla is filled with turkey, cheddar cheese, and a few spinach leaves, then rolled and sliced into small pinwheels. Ingredients

  • 1 large whole-grain tortilla
  • 3 slices turkey breast
  • 1 slice cheddar cheese
  • Small handful fresh spinach leaves
  • 1 tsp cream cheese or mayonnaise (optional thin spread to help the roll hold)
  • Sides:
  • ½ cup cucumber slices
  • ½ apple, sliced

Steps

  1. Place the whole-grain tortilla flat on a cutting board.
     
  2. Spread a thin layer of cream cheese or mayonnaise on the tortilla (optional).
     
  3. Lay the turkey slices evenly across the tortilla.
     
  4. Place the cheddar cheese on top of the turkey.
     
  5. Add a small handful of spinach leaves.
     
  6. Roll the tortilla tightly into a long wrap.
     
  7. Slice the wrap into 1–2 inch pinwheels to create the mini roll-ups.
     
  8. Place the roll-ups in the lunch box and add the cucumber slices and apple on the side.
